1) Chop potatoes into small cubes. mushroom and some carrot, boiled in water with pinch of salt.
2) Let it cool down, and mashed the potatoes. (there is no need to mash the potato completely, it is nice to have some chunk to enhance its texture)
3) Add in some salt, pepper and chicken stocks for flavouring.
4) Add in a spoonful of all purpose flour, and then make them into the size you prefer.
5) First, cover it with flour, then dip in egg and then lastly rolled it on panko (i substituted with crushed crackers instead of panko, I don't have panko readily sitting at home ).
6) Fried it until golden brown.
Simple snacks best for a rainy afternoon.
